Irish Car Bomb Cupcakes

Chief Complaint - Headaches

History of Present Illness - Patient presents with headaches, achy hands, and tiredness.  No significant past medical history however the patient did explain about the high levels of stress she has been dealing with.  She recently finished a 2 hour exam which tested her on immunology, all of which as taught in three weeks.

Allergies: none although she stated that she can now explain everything about allergies

(skipping the rest of the report and going straight to Assessment and Plan)

Assessment - Patient is a stressed medical student who had to just suffer though the awful ordeal of taking an immunology exam.

Plan - Treat with an order of drunk noodles from her favorite Thai take-out place, copious amounts of TV, and many Irish car bomb cupcakes!

Well if the doctor prescribed it, I guess I have to follow the treatment plan to feel better!  Good thing I have a really good recipe for those cupcakes.  My friend Ellen and I made these a couple years ago for a superbowl party and they were literally the most delicious cupcakes I have ever eaten.  Because really, what's better than chocolate, alcohol, and cake?




Irish Car Bomb Cupcakes (makes 12)

Guinness Cake Batter 
1/2 cup Guinness stout
1 stick unsalted butter, at room temperature
6 tbsp  cocoa powder
1 cup  flour
1 cup sugar
3/4 tsp baking soda
1/4  teaspoons salt
1 egg
1/3 cup sour cream (I replaced this with yogurt)

  1. Preheat oven to 350degrees and line a cupcake pan with cupcake liners.
  2. Heat up the beer, butter, and cocoa powder in a pot until all the butter has melted.  Remove from heat to cool.
  3. In a small bowl, mix together the flour, sugar, baking soda, and salt.
  4. In a large bowl, mix together the egg and yogurt.
  5. Mix the chocolate mixture into the egg mixture.
  6. In thirds, mix in the flour mixture into the chocolate egg mixture.  Remember to not overmix!
  7. Fill the muffin cups 2/3 the way up.
  8. Bake for 16 minutes or until a toothpick inserted in the middle comes out clean.
  9. When the cupcakes cool completely, cut holes in them so they can be filled with ganache.
                                       
This is how the cupcakes should look like at this point!

While the cupcakes bake, you can make the ganache!

Jameson Chocolate Ganache Filling:
4oz chocolate chips
1/3 cup heavy cream
1 tbsp butter
2 teaspoons Jameson Irish whiskey (optional)

  1. Heat the heavy cream and butter together.
  2. Pour the warm cream over the chocolate and mix together until everything has melted.
  3. Mix in the whiskey.
  4. Refrigerate the ganache until it thickens. This takes about 30min.
  5. After it thickens, pour it into the holes in the cupcakes.
                                       
This is how the cupcakes should look like now!

Baileys Buttercream Frosting:
1 stick unsalted butter, at room temperature
4 tablespoons Baileys Irish Cream
powdered sugar, to taste

  1. Mix the butter until it is frosting consistancy.
  2. Mix in 1 tbsp of powdered sugar at a time until the frosting is sweet enough.
  3. Mix in the Baileys, one tbsp at a time.
  4. Frost the ganache filled cupcakes!
And THIS is how the final product will look like!
