Amaretto Buttercream Frosting

Baking is fun….but baking with alcohol is even better.  I cant think of anything better to celebrate birthdays than with boozy goodies!  It was a few friends’ birthdays and since I had some Amaretto liquor left over from my own birthday celebration, I figured that this would be an excellent time to experiment.  Chocolate cupcake + frosting with a kick —> perfect birthday surprise!

Amaretto Buttercream Frosting (frosts 12cupcakes)
  • 1/3 cup softened butter (softer than room temp)
  • 1.5 tbsp Amaretto liquor (I used Disaronno)
  • 1/8 tsp salt
  • 1/4 tsp vanilla extract
  • 1 cup powdered sugar
  1. Using an electric mixer, mix together the softened butter, the amaretto, salt, and vanilla extract.
  2. Gradually mix in the powdered sugar and adjust according to taste preferences, depending on how sweet you want the frosting).
  3. Mix frosting until you get a smooth consistency.

I highly recommend the electric mixer part. I didnt have mine so believe me when I tell you that your arm muscles (biceps to be specific)  get a really nice work out when mixing by hand.  Those 2 minutes required a lot of ATP…but apparently, according to what I just recently learned, during that duration, you only use your creatine supply. Whatever…back to the subject on hand.
If you dont like the amaretto, replace it with something else. Baileys, Kahlua, whatever..the possibilities are endless.
In conclusion - Cake: gooooood. Spiked frosting: gooooood.  Those two combined: goooooood.  It’s a win-win situation.
P.S. I just made a FRIENDS reference, which is only the best 90s show of all time, so hopefully some people got it… :)
