As everyone knows, I bake a lot. Especially when I get bored. Yesterday by 4pm, I had already finished work, went to the gym, did laundry, AND watched the latest episode of SUITS. Thus, yesterday was an excellent example of when I boredom baked.
I had a field trip to Amish Country earlier this week and I got a huge tub of cashew butter (for $6!!!) so get ready for some cashew butter cookies!
Cashew butter is pretty rich so I added dried cranberries to the original cookie recipe to add a sweet and tart element.
Cranberry Cashew Butter Cookies
Ingredients
- 1 and 1/4 cups all-purpose flour
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/2 cups unsalted butter, room temp
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup cashew butter
- 1 tsp vanilla extract
- 1 large egg
- 1 cup dried cranberries
Directions
- Preheat oven to 350degrees and oil your cookie sheet.
- In a bowl, mix together the flour, salt, baking soda, and baking powder. Then set aside.
- In a large mixing bowl, cream the butter and both sugars together until they are well combined. The mixture should be light and fluffy.
- Mix in the cashew butter.
- Mix in the vanilla and egg.
- Mix in the flour mixture, half at a time. Dont overmix! Mix until just combined.
- Fold in the cranberries.
- Scoop golf ball size cookie dough balls and put them on the cookie sheet. Flatten the dough just a bit.
- The cookies spread out when they bake so make sure there is some space between the cookie dough.
- Bake for 10min.
- Cool for 10min on the cookie sheet then transfer to a plate.
