Brinner is for Winners

Not going to lie, second year is tough.  Literally every night, my "To Do" list consists of "learn all the drugs" and "learn all the diseases."  So anticipating the fact we were most likely going to be seeing each other less often than we wanted (especially during the week before exams, a group of friends and I thought it would be an awesome idea plan post-exam dinner parties.  Good food and great company with excellent gossip, what more could a girl want to do after an exam?

Last month, after our first exam, we wined and dined to bruschetta and risotto with banana bread for dessert thanks to Anna and Karthya!  Now this time after our immunology exam, my roommate Joy and I made brinner!  On the menu, we had french toast, veggie frittata, and apple butter bars. Yum!  Also, please ignore the fact that brinner was heavy on the carbs.  Carbs mean love and that's all we want after a weekend of hardcore studying and a very difficult 2.5hr exam...



Here are all the recipes from brinner night!  

French toast
Serves 6

Ingredients

  • 5 eggs
  • 3tbsp heavy cream
  • salt and pepper
  • vegetable oil
  • 12 slices of bread
  1. Mix the eggs, cream, salt and pepper in a bowl wide enough so that you can dip the bread into. 
  2. Heat a pan with some vegetable oil.
  3. Dip both sides of the bread into the egg mixture and fry in the pan.
  4. Fry until both sides ate golden brown, about a minute per side.


Stove Top Frittata
Serves 6

Ingredients
  • 1 small red onion diced
  • 2 red peppers diced
  • 8 eggs
  • salt and pepper
  • vegetable oil

  1. Heat a pan with oil and saute the peppers and onion.  Season with salt and pepper.
  2. Whisk together the eggs and more salt and pepper.  Pour eggs into the veggie mixture when they are soft.
  3. Using a spatula, stir the eggs around for a couple minutes so that the eggs cook evenly.
  4. Once most of the eggs are cooked but some is still raw, cover the pan with a lid so that the rest of the egg can steam.
  5. When the eggs are completely set and it is not runny anymore, carefully transfer it to a plate and voala!








Apple Butter Bars

Ingredients

  • 2 cups oats
  • 1 cup whole wheat flour
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 cup butter
  • 1 cup apple butter
  1. Preheat oven to 350degrees.
  2. Mix together all the ingredients except for the apple butter. 
  3. Line a 8x8pan with foil for easier clean up.
  4. Take half of the oats mixture and firmly press it into the pan.
  5. Pour over all of the apple butter.
  6. Crumble the rest of the oats mixture over the apple butter.
  7. Bake for 40minutes.
  8. Cool completely before you eat!
