Spaghetti Squash

SPAGHETTI SQUASH!
This has been a very trendy squash lately so when Safeway had it on sale, I obviously had to try one out.  Very easy to cook. Very healthy.  Very delicious.

How to Roast a Spaghetti Squash
  1. Buy the awesome squash at a grocery store.
  2. Bring home and get excited.
  3. Preheat oven to 400degrees.
  4. Cut the awesome squash in half.
  5. Scoop out the seeds.
  6. Season both halves with olive oil, salt, pepper, and whatever other seasonings you want. I used garlic powder.
  7. Roast the squash for 40min.
  8. Take the squash out of the oven and use a fork to tease the squash strands apart.  It will look exactly like spaghetti!
  9. Season with more salt and pepper if needed.

Look at all the squash! After roasting, it will still have a crunchy texture to it, similar to….I guess radish or or turnip or something like that.  Replace the pasta in any dish with this and you have a new dish that is 10x more healthy!

I paired mine with chicken and asparagus. Noms.  Best part about using this squash is that since youre replacing carbohydrates with vegetables, you dont feel guilty about having seconds! Or thirds…or fourths….
