Cashew Butter Cookies

As everyone knows, I bake a lot. Especially when I get bored. Yesterday by 4pm, I had already finished work, went to the gym, did laundry, AND watched the latest episode of SUITS.  Thus, yesterday was an excellent example of when I boredom baked.
I had a field trip to Amish Country earlier this week and I got a huge tub of cashew butter (for $6!!!) so get ready for some cashew butter cookies!

Cashew butter is pretty rich so I added dried cranberries to the original cookie recipe to add a sweet and tart element.  
Cranberry Cashew Butter Cookies
Ingredients
  • 1 and 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 cups unsalted butter, room temp
  • 1/2 cup granulated sugar
  • 1/2 cup  brown sugar
  • 1/2 cup cashew butter
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup dried cranberries
Directions
  1. Preheat oven to 350degrees and oil your cookie sheet.
  2. In a bowl, mix together the flour, salt, baking soda, and baking powder. Then set aside.
  3. In a large mixing bowl, cream the butter and both sugars together until they are well combined. The mixture should be light and fluffy.
  4. Mix in the cashew butter.
  5. Mix in the vanilla and egg.
  6. Mix in the flour mixture, half at a time.  Dont overmix!  Mix until just combined.
  7. Fold in the cranberries.
  8. Scoop golf ball size cookie dough balls and put them on the cookie sheet.  Flatten the dough just a bit.  
  9. The cookies spread out when they bake so make sure there is some space between the cookie dough.
  10. Bake for 10min.
  11. Cool for 10min on the cookie sheet then transfer to a plate.
  12. ENJOY!
